Recipe: Easy Chicken Cacciatore


 Very easy and a sure hit !  
Chicken Cacciatore
(printable recipe)
Ingredients:
3 pounds frying chicken, cut-up (I use boneless chicken breasts)
3 tablespoons oil or shortening
2 cups tomato sauce (two 8 oz. cans)
3/4 cup tomato paste (6 oz. can)
1/2 cup diced onion
1 teaspoon salt
1 teaspoon Italian seasoning or oregano
1/4 teaspoon garlic powder
1/8 teaspoon pepper

Directions:
Brown chicken in oil in a large fry pan. Drain excess oil. Stir in remaining ingredients. Reduce heat. Cover, and simmer 35-40 mins. until tender. If desired, serve chicken pieces with sauce over rice or spaghetti.
[I saute the onion after browning the chicken and you can deglaze the pan with about 1/4 cup of wine before adding the rest of the ingredients.]
