Recipe: Pinwheel Pizza

Great recipe for entertaining. The pinwheel is made from this pizza dough recipe.

Roll out two 12 inch circles of dough.  Put first circle on pizza pan and add tomato  or marinara sauce, lots of cheese and cut up pepperoni to your taste.  Sprinkle with Italian seasoning.

Cover with a second round of dough and pinch edges together.  Cut the sections as shown and twist each section. Spray with olive oil spray or brush with olive oil and sprinkle top with shredded cheese.

Serve with more sauce for dipping.

Recipe: Calzone

This delicious sandwich by Giada De Laurentiis is an ideal appetizer or lunch. 
Simply follow her recipe below and enjoy!  I did substitute pepperoni for the prosciutto and I rolled the dough into a rectangle rather than a circle. 
The pizza dough is often found in the deli or bakery department of most grocery stores.  You can now find gluten free pizza dough as well in some stores.

PROSCIUTTO MOZZARELLA PINWHEELS
Ingredients: 
Flour for dusting
1 lb. purchased pizza dough
2 cups shredded mozzarella cheese
7 ounces prosciutto, thinly sliced
1 cup coarsely chopped baby spinach (about 1.5 ozs.)
1 tbsp. olive oil
Kosher salt and freshly ground black pepper

Directions:
Preheat the oven to 425'F and position a rack in the lower 1/3 of the oven.
Line a baking sheet with parchment paper.

On a lightly floured work surface, roll out the pizza dough into a 12 to 14" circle, about 1/4 inch thick.  Sprinkle 1/2 of the mozzarella over the dough.  Arrange the prosciutto over the cheese in a single layer.  Sprinkle with the chopped spinach, then top with the remaining cheese.

Roll the dough into a thin cylinder, gently tucking in the ends.  Brush
the entire roll with the olive oil and season with the salt and pepper.
Place the dough, seam-side down, on the baking sheet and bake for 
25 mins. until the top is golden brown.  

Cool the roll for 3-4 mins. , then use a serrated knife to cut into slices.

Recipe: Pizza Fondu

PIZZA FONDUE
 Ingredients:
1  16 oz. can tomato sauce
1  8 oz. package shredded mozzarella
3 tbsps. Parmesan cheese
1 tbsp. parsley flakes
1 tbsp. oregano

Directions:
Heat tomato sauce in a saucepan or microwave.  When hot, add Parmesan cheese, parsley flakes and oregano.  Add mozzarella.  Stir until melted.  Transfer to a fondue dish and serve with cubed French bread.

Recipe: Phyllo Wrapped Asparagus

Excellent appetizer that can be prepared ahead and baked just before 
serving.
Phyllo Wrapped Asparagus

Ingredients:
1 bunch of thin asparagus spears
1/2 (16 ounce) package frozen phyllo dough sheets, thawed per package directions. (Reserve second tube for later use - return to freezer.)
1/2 cup butter, melted
Wedge of Asiago cheese, shredded (could also use Parmesan)

Directions:
Preheat oven to 375'.
Snap off the tough ends of the asparagus. Steam spears for a few minutes in the microwave to partially cook.
Unwrap the phyllo and cut the stack in half lengthwise.
Cover the phyllo with a damp towel to keep it from drying out. Take 1 sheet of phyllo and brush lightly with some melted butter. Cover completely.
Lay one asparagus spear across the short end of dough and add about a 1/2 tablespoon of cheese along spear. Then roll dough, spear and cheese jelly-roll style and place seam side down on a baking sheet.  Cover with damp towel as you prepare the remaining asparagus.

Repeat until all the asparagus spears are used up.


Before baking, brush with more melted butter. (If using Parmesan cheese, sprinkle on outside as well.)

Place baking sheet in oven and bake for 15 mins or until golden brown and crispy.

Delightful to devour!

Note: You can make these a bit ahead and keep covered in plastic wrap on a cookie sheet in the refrigerator. I have done this for a couple of days with leftovers and they were still great.

Number Of Servings: Makes about 32 asparagus spears

Recipe: Boursin Cheese Spread

Boursin Cheese Spread
Ingredients:
8 ounces cream cheese
4 ounces farmer's cheese or cottage cheese
2 large cloves garlic, mashed (garlic press)
1/4 cup dried parsley
1/4 cup dried chives
2-3 tbsp. sour cream, if needed



Directions:
Mix all ingredients together until blended well, using 2-3 tbsps. sour cream, if needed for smooth consistency.

Sprinkle with salt and pepper to taste.

Blend well and refrigerate. Can also be frozen.

Spread on your choice of crackers. Very tasty
 .

Recipe: Hot Crabmeat Dip

Hot Crab Dip

Habit forming! Serve with chips or crackers. Can be made ahead and reheated in the microwave. We have been making this dip in our family for many years and it is always a hit. Beware, you will not be able to stop eating this dip....


Ingredients:
1 can crabmeat (be sure to remove any cartilage) , soaked in 2 tbsps. lemon juice
1 clove garlic, crushed
8 ounces cream cheese
1 tsp. minced onion
1/4 cup mayonnaise
1/8 tsp. salt
1/4 tsp. Worcestershire sauce
1/4 cup light cream or half and half
1 tsp. minced chives

Directions:

Mix all ingredients together and heat on low until smooth. Serve warm. Can be reheated in microwave oven.

Recipe: Cheese Balls

This recipe is from a friend and it is easy and delicious! Great to have uncooked in the freezer to bake up for last minute company.
CHEESE BALLS
(printable recipe)
4 ozs. shredded cheddar cheese (1 cup)
1/2 cup flour
1/2 teaspoon paprika
1/4 cup margarine (1/2 stick)
1/4 teaspoon salt


Mix all ingredients. Roll into small balls and bake on greased cookie sheet for 8-10 minutes. These can be frozen before baking, in which case, bake 15-20 minutes at 375'. Makes about 24 yummy cheese balls. Freeze on a tray first before storing in a plastic bag in the freezer.

Recipe: Crabmeat Cheese Wedges

Crabmeat Cheese Wedges:
These are very easy to prepare and a sure hit at any gathering

Ingredients:
1 (5oz.) jar Old English processed cheese
1 (6oz.) can crabmeat - use more if desired
1 stick softened butter
1/4 tsp. garlic salt
1/4 tsp. seasoning salt
6 English Muffins
Directions:
Let cheese and butter stand at room temperature until softened. Mix cheese, butter, crabmeat, and seasonings until well blended. Spread mixture on 12 English muffin halves. Broil until golden. Cut each half into 4 wedges.
Note: These can be frozen flat (uncooked) on a cookie sheet and transferred to a plastic bag in the freezer. Cook under broiler without defrosting but watch closely !

Recipe: Stuffed Mushrooms





This is an easy recipe which is an instant hit with guests. Enjoy !

STUFFED MUSHROOMS
(printable recipe)
12 ozs. button mushrooms, wiped. Remove stems and save.
Chop stems and saute in 1/4 cup margarine.
Chop 1/4 cup onions and saute with stems.
Add 2 tablespoons cooking sherry and let soak into mixture.
Mix together: 3/4 cup of bread crumbs, 1/4 cup Parmesan cheese, salt, pepper and garlic salt to taste.
Add to butter/stem mixture. Stuff caps. Place on foil covered cookie sheet. Bake 15 minutes in a 375' oven. Can be prepared a day ahead and refrigerated - bake just before serving.

Recipe: Pizza Rolls on a Stick

I love this idea from Christy at from glitter to gumdrops.  Check out her blog for her inspiration and her clever take on a graduation gift.  I think this would make a good appetizer when served with a marinara sauce. 
Roll out dough - I purchased at the super market bakery - and sprinkle with mozzarella cheese.  You can buy it shredded or do it yourself which I did.
Make three rows of pepperoni and sprinkle garlic powder, oregano and basil over the top.  I also added some fresh basil from the garden.  Leave spaces between pepperoni so cheese will help dough adhere to itself.
Roll as tight as possible from the long side after spreading a line of water along the three other edges to seal the edges and keep the roll from separating during baking.
Slice into 3/4 inch rounds and place on a Pam sprayed cookie sheet.
Bake at 425 degrees for about 10 minutes. Do not overcook.
Insert pointed end of skewer into the pizza roll while it is still hot.  Skewers are available at most super markets.  You can serve with a marinara dipping sauce. [I later checked out a site Christy mentioned on her blog and would probably spread the marinara sauce over the bread dough first.]
Or as Christy did, wrap in individual bags and place in a styrofoam lined bucket to give as a gift.  She has all the details on her blog.  You can purchase clear cellophane bags for this but I simply used plastic sandwich bags.

Recipe: Sausage and Cheese Triangles by Mrs Anderson



Delicious and easy hors d'oeuvre that freezes well.
Sausage and Cheese Triangles

Ingredients:
1 -16oz package of Kraft Velveeta cheese
1 - 12oz package of Jimmy Dean sausage meat (or any brand, Jimmy Dean is less fatty)
1 lb. package of rye cocktail bread


Directions:
Saute sausage meat in fry pan until cooked and broken up into small bits - a large fork works well for this. Pour off any excess fat that may form - not necessary with Jimmy Dean. Add Velveeta in pieces and stir over low heat until melted and mixed with sausage meat. Remove from heat.


Spread onto each slice of rye bread and lay side by side on cookie sheet. Freeze until solid then place into plastic bags for future use.

To cook, cut each square in half diagonally while still frozen, (or you can broil first and cut later),  place on foil lined cookie sheet, and broil until bubbly. This takes about 4 mins. but watch closely to prevent burning. Makes about 40 squares, 80 triangles.
