Recipe: Popovers

Delicious puffy confections that melt in your mouth....

INGREDIENTS:
3 tablespoons unsalted butter, melted
3 eggs, lightly beaten
1 cup milk
1 cup all-purpose flour
1/2 tsp. salt

DIRECTIONS:
Preheat oven to 450'F. Spray the cups of a 12 cup mini popover pan with nonstick cooking spray.  Pour 1/2 tsp. of the melted butter into each cup.

In a bowl, whisk together the eggs and milk, then whisk in the remaining 1 tablespoons of melted butter.

In a large bowl, whisk together the flour and salt, then whisk in the egg mixture. Whisk vigorously until smooth, about 2 minutes.

Divide the batter among the prepared cups and bake for 15 minutes. Reduce the heat to 325'F and bake for 7 minutes more.

Remove from the oven and invert the pan onto a wire rack to remove the popovers.  Serve immediately with butter and jam.
Makes 12 mini popovers.
