Recipe: Quick Ham and Cheese Quiche

I made these quiches for weekend company and they were a hit after reheating in the oven for a short time at 350'. Or microwave individual wedges as needed. I have also frozen them after baking.  After defrosting in the refrigerator, let sit on the counter to come to room temperature before warming in the oven.

Ham and Cheese Quiche
(printable recipe)
Double recipe for two quiches.
9" unbaked pie shell (frozen is fine)
4 eggs
1 1/2 cups milk
dash of pepper
2 cups shredded Swiss cheese
8 slices crisp bacon, crumbled
1/4 to 1/2 cup chopped ham
2 tbsps. flour

Preheat oven to 350'. Combine eggs, milk and pepper in a blender. Mix.
Toss cheese, ham and bacon with flour.
Place in pie shell and pour egg mixture over top.
Bake 40-45 minutes on a cookie sheet. (Air bake cookie sheet works best. Regular cookie sheet may buckle during baking.) Let stand 10 minutes.

  1. This looks delicious! I made quiche with ham and broccoli this week and they loved it! My picky teen went back for seconds and my roommate scooped up the leftovers for lunch the next day at work! Thanks for sharing your recipe!

  2. Looks delicious. Such a good idea to include your blog address in your printable recipe. Most don't do that, but I always like to put a name tag on the recipes I save so I can give credit to the person who gave me the great dinner idea. thanks. :-)

  17. This is very much like the quiche I used to make. I only wish that my family liked it. Usually they eat a tiny sliver and then leave the table. darn.
