Recipe: Broccoli Quiche

Nice to serve for lunch or breakfast - this recipe puffs up a bit with the addition of baking powder. It can be prepared ahead and warmed in the oven
before serving.  Enjoy !
Broccoli Quiche
(printable recipe)
Ingredients:
1 10oz. pkg. frozen chopped broccoli, thawed and pressed dry or about 2 cups chopped raw broccoli
1 1/2 cups (4 ozs.) shredded Colby, Cheddar or Swiss cheese
3 large eggs
1 1/2 cups milk
3/4 cup flour
1/2 tsp. baking powder
1/2 tsp. salt

Directions:
Arrange broccoli in an unbaked deep dish pie shell.   Supermarket variety is fine.   Sprinkle cheese over broccoli.   Mix eggs, milk, flour, baking powder and salt in a blender until smooth.   Pour over cheese slowly.  Place pie on a cookie sheet and bake in a 350' oven about 45 mins. until puffed and brown.  You can also make ahead and freeze.  For a variation see Ham and Cheese Quiche.

Recipe: Quick Ham and Cheese Quiche

I made these quiches for weekend company and they were a hit after reheating in the oven for a short time at 350'. Or microwave individual wedges as needed. I have also frozen them after baking.  After defrosting in the refrigerator, let sit on the counter to come to room temperature before warming in the oven.

Ham and Cheese Quiche
(printable recipe)
Double recipe for two quiches.
9" unbaked pie shell (frozen is fine)
4 eggs
1 1/2 cups milk
dash of pepper
2 cups shredded Swiss cheese
8 slices crisp bacon, crumbled
1/4 to 1/2 cup chopped ham
2 tbsps. flour

Preheat oven to 350'. Combine eggs, milk and pepper in a blender. Mix.
Toss cheese, ham and bacon with flour.
Place in pie shell and pour egg mixture over top.
Bake 40-45 minutes on a cookie sheet. (Air bake cookie sheet works best. Regular cookie sheet may buckle during baking.) Let stand 10 minutes.
