Recipe: Chicken Kiev

Description: Delicious !
Chicken Kiev
(printable recipe)
Ingredients:
Butter mixture: Do ahead and freeze
3/4 cup butter or margarine
1 tbsp. chopped parsley

1 tbsp. finely minced shallots or onions
1/2 tsp. salt
1/8 tsp. pepper
Mix above ingredients and shape into 6 sticks. Chill or freeze until firm. (Freeze in a small container and slice into sticks when frozen)

Chicken:
6 whole chicken breasts, boned and skinned

salt and pepper
1 egg
1 tbsp. cold water
2/3 cup bread crumbs
1/4 cup butter or margarine



Directions:
Place 1 breast between 2 pieces of plastic wrap or wax paper. Pound slightly, and repeat on rest. Place 1 stick of butter on each breast. Roll to close completely. Close edges with wooden tooth picks. Sprinkle lightly with salt and pepper.

Dip in egg mixed with water. Roll in crumbs to coat well. Heat butter in large skillet over medium heat. Saute breasts until golden, turning with 2 forks.

Put chicken in shallow baking pan. Bake in 350' oven for 15-20 mins. or until tender. (You can do early in the afternoon up to "bake" then refrigerate.) Be sure to remind guests to re
move toothpicks !

I love make-ahead recipes, and this one sounds so delicious. I always thought Chicken Kievs were quite complex to make but your recipe makes them sound very do-able - thanks for sharing it!
